Holiday Harvest Salad


  • Vertical Roots Green Oak Living Lettuce
  • Vertical Roots Crisp Romaine
  • Harris Teeter Bacon
  • Sweet potatoes (substitute butternut squash)
  • Olive Oil (2 tbsp)
  • Harris Teeter Organics Wildflour Honey (2 tbsp)
  • Cinnamon (1 tsp)
  • Red Onion
  • Simple Truth Goat Cheese
  • Harris Teeter Farmers Market Dried Cranberries
  • Harris Teeter Farmers Market Pumpkin Seeds
  • Salt & pepper


  • Fry bacon in a pan, set aside to cool, then chop into bite sized pieces
  • Cube sweet potatoes into 1 inch pieces
  • Combine olive oil, honey, cinnamon, salt and pepper and mix with the sweet potatoes
  • Place on a baking sheet and roast at 425º for about 20-30 minutes. Every 10 minutes, flip for crisp edges!
  • Slice red onion into thin slivers
  • Tear or chop the leaves of Green Oak and Romaine lettuces (don’t forget to compost the roots)
  • Place lettuce in a bowl, and top with roasted sweet potatoes, pumpkin seeds, dried cranberries, bacon, and crumbled goat cheese

This salad is already bursting with so much flavor, simply drizzle olive oil, salt and pepper for the perfect touch!
